Flavour with tradition
Coop and Slow Food – true flavour combined with artisan tradition. By offering products from Slow Food Presidi groups, we are promoting traditional ways of producing food, Swiss culinary culture and the diversity of delicious food available to us.
Presidi are Slow Food projects that support and promote small manufacturers and their traditional, high-quality artisan products. The aim is to guarantee a future for farmers, shepherds, fishermen and craftsmen by opening up new markets for their products, thereby keeping their ancient cultural knowledge alive.
Gli standard Slow Food si rifanno all’Arca del Gusto, fondata a Torino nel 1996 con l’obiettivo di catalogare i prodotti alimentari di tutto il mondo. Per Slow Food i prodotti devono:
- possedere qualità organolettiche uniche
- essere legati a una determinata area geografica
- essere prodotti in piccole aziende artigianali
- provenire da coltivazioni sostenibili
- essere a rischio di estinzione
Se rispettano questi criteri, si tenta di tutelarli all’interno di un Presidio.
