Texture: smooth, semi-firm and slightly crumbly with a small number of round, evenly distributed holes mostly measuring 0.4 - 0.6 cm, occasional small cracks are allowed
Ripening period: 301 - 360 days
Comments: Swiss hard cheese, full fat, made from raw milk.
