Pavé d'affinois

The Pavé d’Affinois cheese takes its name from the French word "pavé", meaning paving stone, and its place of origin. The cheese's characteristic cube shape resembles a paving stone and the geographic origin of the first Pavé is the region of Dauphiné, hence the name "Dauphinois".
 The Pavé Dauphinois brand later became Pavé d'Affinois. This name is derived from the French word "affinage" (maturing) and reflects the exacting ripening process. This classic full-fat soft cheese is made from pasteurized cow's milk. However, there are now many different varieties made from goat's milk and sheep's milk. All have a mild flavour, a creamy texture, a thin rind and a ripening period that increases the intensity of the cheese over time without resulting in too strong a flavour.

Sensory characteristics

The ripening process takes just 6-9 days. Though similar to Brie in appearance and flavour, this cheese is much creamier and takes less time to ripen as the milk undergoes a special filtration process.The cheese has a rich flavour that is slightly buttery, salty and creamy. Its rind is very soft and fairly neutral in taste. As such, the cheese has a rather mild aroma. In order to enjoy the aroma and texture to the full, the cheese should be removed from the fridge 30 minutes ahead of time so that it melts in the mouth.

Owing to its short ripening period and high carbohydrate content, Pavé d’Affinois is not lactose-free.
