Comments: No less than 400 litres of milk are required to produce one wheel of cheese weighing approx. 33 kg. Each wheel is aged for several months and is repeatedly brushed with brine. Le Gruyère is a cheese for connoisseurs. Specially selected wheels with the best chance of reaching optimal quality are reserved for the special ageing process. This means that the cheese is allowed to ripen fully and guarantees the distinctively spicy flavour of Le Gruyère.
