Description
Aroma: pure herb cheese
Flavour: cheese and nuts, mild
Texture: elastic paste, ranges from a few to lots of holes, some split holes
Ripening period: 60 - 120 days
Comments: This aromatic, organic traditional herb cheese has a unique herby flavour and comes from Northwestern Switzerland. It is produced by Sepp Brülisauer in the dairy in Künten, Freimant, in the Canton of Aargau. This cheese is an organic regional speciality. During the ripening process, the cheese is treated with a herbal brine. The recipe for this brine is a closely guarded trade secret. A highlight on any cheeseboard. Great with waxy potatoes. Tip: Bring this cheese to room temperature before serving to allow it to release its characteristic herby flavour.
