Description
Aroma: fruity, spicy
Flavour: fruity, with a more or less salty base note
Texture: smooth, semi-firm and slightly crumbly with a small number of round, evenly distributed holes mostly measuring 0.4 - 0.6 cm, occasional small cracks are allowed
Ripening period: 80 - 180 days
Comments: This Gruyère is painstakingly produced by hand on Vournetz Alp in Switzerland at 1,600 metres above sea level. It is an Alpine Gruyère with a hazelnut flavour and a mildly acidic aroma rather like fresh butter. The milk comes from cows that spend the entire summer grazing solely on herb-filled Alpine pastures amid an unspoilt natural landscape. The wide variety of herbs gives the milk a unique aroma that is also evident in Alpine Gruyère cheese. It has a strong, spicy flavour.
