Burrata is a fresh filata-type cheese produced from cow's milk in the Murgia region of Apulia. At a family-run farm in Noci, far down in the heel of the Italian boot, a great deal of craftsmanship goes into making burrata. In a matter of seconds the cheese curd, affectionately called fior di latte (flower of milk), is gently and sensitively formed into pouches, which are then packed with a creamy filling. Combined with its delightfully smooth consistency and its creamy, buttery, slightly sweet aroma, this is what makes the product unique.
