Pici are a typical Italian pasta variety from Tuscany. To make the pasta the Panarese family uses only durum wheat from its own fields and pure agua del vivo from a spring on Monte Amiata. The pasta is produced according to ancient recipes by traditional methods. The rough surface of the pici means that sauce clings to them well. The spaghetti-like shape is rolled into little pasta nests, which are then dried slowly at low temperatures on traditional sieves.
