This egg pasta comes from a small family business in Calabria. Its unique quality is irresistible, with a fine structure and a subtle flavour of eggs. Even when cooked it retains its distinct shade of yellow. Only eggs from free-range hens and specially selected varieties of durum wheat are used in the production process. The dough is mixed, rolled and cut in a process that is gentle at every stage. The finished pasta is slowly dried on wooden frames to preserve as much of its elasticity as possible.
