Japanese soba noodles are made from buckwheat flour, which gives the noodles their brown colour. Soba is sweeter and more flavourful than normal wheat noodles. They can be eaten cold with a dip sauce (for example: soy sauce) or in a hot meat broth or soup.

Boiling
Nudeln in eine grosse, tiefe Pfanne mit kochendem Wasser geben. Aufkochen und für ca. 7 Minuten köcheln lassen. Die Nudeln sollten noch relativ fest im Biss sein. Die Nudeln kalt abschrecken, abtropfen lassen und zur Seite stellen. Als Beilage: Nudeln in wenig Oel anbraten und mit frischem Koriander servieren.
