Schwertfisch (Xiphias gladius) geräuchert
The swordfish is a predatory bony fish. It gets its name from its characteristic sword-like rostrum, a bony extension of its upper jaw. Swordfish are highly prized as food: their flesh is firm and very lean, like tuna. Our swordfish is filleted by hand, marinated with sea salt, then cold-smoked over embers of oak and beech for several days in the first and oldest salmon smokehouse in Switzerland. This gives it a particularly fine, delicate texture.
