Spawned in western Canada, the wild salmon sets out on its journey to the coastal waters of the North Pacific Arctic Ocean. In the process this migratory fish can grow to a length of a metre and a weight of six kilograms. In the first and oldest salmon smokehouse in Switzerland it is then cold-smoked over beech and oak in a stone oven. Carried out exclusively by hand, this traditional process takes four to six days. The interplay of flavours created in the process makes this wild salmon from Canada a unique treat for the palate.
