In the 17th and 18th centuries Piedmont developed into an important centre of cocoa and confectionery. The basic ingredients of tartufi bianchi and tartufi nocciolati al latte are white and fine milk chocolate and Piedmont hazelnuts. The tartufi nocciolati neri combine tart dark truffle chocolate with superb Piedmont hazelnuts, while the body of the delicate tartufi nocciolati bianchi al pistacchio consists of white chocolate and roasted pistachios. Grains of sel de Guérande give these truffles that extra something.
