Cashewnüsse geröstet, gewürzt
The cashew tree, evergreen and deciduous, originated in tropical Brazil. Its fruit – not unlike an apple – forms a kidney-shaped cashew nut at its tip. This snack is produced by roasting the nuts, then coating them in green wasabi dough. Wasabi, the south-east Asian green horseradish, grows wild on the banks of flowing waterways. Traditionally this green spice is grated with sharkskin, but metal graters are also used today. Once grated, wasabi loses its flavour very quickly when exposed to the air.
