Gluten-free chicken fajitas

These spicy fajitas can be whipped up for the whole family in no time at all.

  • 1 pack of gluten-free Old El Paso™ tortillas
  • 1 sachet of gluten-free Old El Paso™ fajita spice mix
  • 2 tbsp olive oil
  • 500 g chicken breast or fillet, thinly sliced
  • 1 red onion, thinly sliced
  • 2 red and/or green peppers, thinly sliced
  • 1 lime, cut in half
  • 500 g of cherry tomatoes, quartered
  • handful of coriander, chopped
  • salt


  1. Heat a large pan and fry the chicken in hot oil over a high heat for 5 mins. until it is cooked through. Add the spice mix, onion and pepper, and cook for a further 2 mins.
  2. Warm the gluten-free tortillas as per the packet instructions.
  3. To make the fresh salsa: Squeeze the juice of half a lime and mix with the cherry tomatoes and coriander. Season with a little salt.
