Air-cured beef rolls with Sbrinz cheese

Filling
- 125 g plain organic cream cheese
- 80 g grated Sbrinz
- 40 g smoked almonds, roughly chopped
- 1 tbsp chives, finely chopped
- 1.5 dl cream, whipped until stiff

- 120 g Bündnerfleisch (Graubünden air-dried meat) in slices

And that's how it's done
Filling
Beat the cream cheese and Sbrinz with a whisk until smooth, add the almonds and chives, mix. Carefully fold the cream into the mixture, cover and chill for approx. 30 mins.
Rolls
Spoon the filling into a piping bag with a smooth nozzle (approx. 1 cm in diameter). Pipe one strip onto each piece of beef, roll up. Tie one stem of chive around each roll.
