Beetroot
- 120 g boiled beets, peeled, chopped
- 0.25 tsp salt
- 1 tbsp lemon juice
- 100 g horseradish mousse
- 1 tbsp coarse-grain mustard
- 30 g boiled beets, cut into cubes
To serve

- 100 g crackers
- 0.5 tsp Tasmanian pepper
- 10 g Micro Greens

And that's how it's done
Beetroot
Puree the beetroot with the lemon juice, season with salt. Mix in the horseradish mousse, diced beetroot and mustard.
To serve
Spread the beetroot mousse on the crackers, season with pepper and garnish with micro greens.
