Thread the dim sum and 3/4 of the pineapple cubes alternately onto the skewers. Set aside the remaining pineapple cubes and juice. Heat the oil in a non-stick frying pan, cover and fry the skewers for approx. 2 mins. on each side. Pour in the water, cover and allow to evaporate over a high heat.
Dice the reserved pineapple, mix with the pineapple juice, lemongrass and soy sauce. Serve with the skewers.
