Heat the oil in a pan. Fry the mushrooms in batches for approx. 3 mins., then remove from the pan. Reduce the heat, add the garlic and thyme, cook for approx. 1 min., return the mushrooms to the pan, season.
Divide the dough into approx. 20 portions, shape into balls, place on two baking trays lined with baking paper, flatten a little. Top with the mushrooms, cheese and thyme.
Approx. 15 mins. in an oven preheated to 220 °C (convection).
