  • 1 lime, rinsed with hot water, dabbed dry; use grated zest only
  • 100 g feta, crumbled
  • 0.5 bunch coriander, finely chopped

Heat the oil in a frying pan, fry the breadcrumbs, garlic, chilli and lime zest for approx. 3 mins., transfer to a bowl and leave to cool. Add the mint, coriander and feta, mix.
