Mix the flour, yeast, sugar and salt in a bowl. Crumble the yeast, mix in. Add the water and oil, mix and knead to form a soft, smooth dough. Cover and leave to rise for approx. 2 hrs. at room temperature until doubled in size.
Slice the mozzarella. Cut the olives in half, slice the pepper. Divide the dough into 6 pieces. On a lightly floured surface, roll out into circles (each approx.15 cm in diameter), place on a baking tray lined with baking paper.
Top with the tomato sauce and mozzarella. Make faces using the olives and pepper.
Approx. 30 mins. in the lower half of an oven preheated to 200°C.
