Mix the almonds, almond mixture, butter, vanilla sugar, lemon zest and juice.
Cut the dough into 8 equal triangles. Spread the almond filling over the bottom half of the dough pieces. Roll the dough up towards the tip. Place the croissants on a baking tray lined with baking paper, brush with a little egg, sprinkle with flaked almonds.
Approx. 20 mins. in the centre of an oven preheated to 200°C. Remove from the oven, leave the almond croissants to cool on a rack.
