Beat together the eggs, sugar, vanilla seeds and lemon zest using the whisk on a hand mixer and continue to whisk until the mixture turns a paler colour. Stir in half of the lemon juice and the Dessert Extrafin. Combine the flour with the sultanas and walnuts, stir in. Transfer the cake mixture to the prepared tin. Mix the apple segments with the reserved lemon juice and push into the mix.
Approx. 1 hr. in the lower half of an oven preheated to 180°C. Remove from the oven, allow to cool a little then remove from the tin.
