Mix the meat, lime zest and salt in a bowl. Knead the mixture well by hand until the ingredients form a compact mass. With wet hands, shape into 4 burgers.
To cook the burgers
Heat the oil in a large frying pan. Fry the burgers over a medium heat for approx. 7 mins. on each side.
To prepare the ajvar mayonnaise
Combine the mayonnaise, ajvar, cane sugar and 1 tbsp of lime juice, spread half of this mixture over the bottom half of the bread rolls. Place the burgers on top and drizzle with the remaining lime juice. Top with the remaining mayonnaise, ginger and coriander, cover with the top half of the bread rolls.
