Pea burger with soft-boiled eggs

Burger
- 300 g frozen peas, defrosted
- 1 garlic clove, squeezed
- 2 fresh egg
- 1 tsp salt
- 80 g white flour
- 0.5 bunch peppermint, finely chopped
- 2 tsp baking powder
Mint & yoghurt dressing
- 1 tbsp lemon juice
- 150 g plain greek yoghurt
- 0.5 bunch peppermint, finely chopped
- salt and pepper to taste
To fry the burger
- olive oil for frying
Soft-boiled eggs
- 4 fresh egg
- water, boiling

And that's how it's done
Burger
Puree half of the peas along with the eggs, garlic and salt in a measuring cup. Mix in the remaining peas. Combine the flour and baking powder, mix in along with the mint.
Mint & yoghurt dressing
Combine the yoghurt and lemon juice, mix in the mint, season.
To fry the burger
Heat the oil in a non-stick frying pan. Pour half of the batter into the pan to make 4 fritters (each approx. 7 cm in diameter). Reduce the heat. Fry for approx. 3 mins., turn the fritters, cook for a further 3 mins., cover and set aside, repeat these steps with the remainder of the batter.
Soft-boiled eggs
Simmer the eggs in boiling water for approx. 7 mins., rinse in cold water, then peel.
To serve
Plate up the fritters with the mint & yoghurt dressing and the eggs.
