Bring the Lillet and water to the boil along with all the other ingredients up to and including the vanilla pod and seeds. Add the apples, reduce the heat, cover and simmer for approx. 10 mins. until just soft, leave to cool in the liquid.
Place the raclette cheese and apples in the raclette pans, melt under a raclette grill for approx. 8 mins. Top with the fried onions.
