Unroll the puff pastry, cut out 6 circles (each approx. 12 cm in diameter), transfer to a baking tray lined with baking paper.
Place alternate slices of cheese and apple in the middle, sprinkle with thyme, season, fold in the edges.
Approx. 15 mins. in the centre of an oven preheated to 220°C. Remove from the oven and drizzle with oil.
