To melt the chocolate
Break the dark and white chocolate into pieces, place each type in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate and stir until smooth.
Chocolate-covered fruit
Cut each apple into 8 slices, removing the core. Insert toothpicks into the fruit.
To decorate
Dip the fruit three-quarters of the way into the white or dark chocolate and sprinkle with hundreds & thousands. Leave the chocolate-covered fruit to dry on a rack.
