Skewers
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 2 courgettes, cut lengthwise into slices approx. 2 mm thick
  • 6 wooden skewers
  • 400 g paneer, cut into approx. 3 cm cubes
Sauce
  • 2 tbsp lemon juice
  • 0.25 tsp salt
  • 0.25 tsp pepper
  • 3 tbsp olive oil
  • 4 sprigs oregano, finely chopped
  • 4 tbsp pine nuts, roasted

Skewers
Mix the courgette slices with the oil and salt, leave to absorb for approx. 15 mins. Thread the courgette onto the skewers in a wavy design along with the paneer.
Sauce
Whisk together the lemon juice and oil, season. Stir in the oregano and pine nuts.
Charcoal/gas/electric grill
Cover the skewers and grill over/on a medium heat (approx. 200 °C for approx. 4 mins. on each side. Plate up the skewers, drizzle with the sauce.
