Chocolate waffles with caramelized pears

This is needed

Caramelized pears
- 2 tbsp lemon juice
- 100 g sugar
- 0.5 dl water
- 2 pears, cut into wedges
- 25 g butter
Batter
- 200 g white flour
- 50 g cocoa powder
- 80 g ground cane sugar
- 2 tsp baking powder
- 1 dl sparkling mineral water
- 125 g butter, melted, left to cool
- 2 egg yolk
- 1 dl milk
- 0.25 tsp salt
- 2 egg white
- 1 pinch salt

And that's how it's done
Caramelized pears
Heat the sugar in a wide pan without stirring. Reduce the heat and simmer, swirling the pan occasionally until a light brown caramel has formed. Add the lemon juice and water, cover and simmer until the caramel has dissolved. Add the pears, cover and simmer over a low heat for approx. 5 mins., remove the lid, reduce to a syrupy consistency for approx. 3 mins. Remove the pan from the heat, stir in the butter.
Batter
Empty the flour into a bowl along with all the other ingredients up to and including the salt, mix and make a well in the centre. Combine the milk, water, butter and egg yolks, pour into the flour, mix using the whisk on a mixer. Beat the egg whites with the salt until stiff, carefully fold into the batter.
Waffles
Heat up the waffle iron. Brush with a little clarified butter. Spoon approx. 3 heaped tablespoons of batter onto the waffle iron for each waffle, cook the waffles for approx. 5 mins., remove and keep warm. Repeat these steps with the remainder of the batter. Serve the waffles with the pears and syrup.
