Finely crush the biscuits in a plastic bag using a rolling pin, empty into a small bowl. Mix in the butter. Spread the mixture over the bottom of the prepared tin and press down firmly with the base of a glass.
Cream cheese mixture
Grate the zest of the lemon, place in a bowl. Add the cream cheese, sugar, eggs and cornflour, mix well using the whisk on a mixer. Spread the mixture over the biscuit base.
Approx. 40 mins. in the centre of an oven preheated to 160°C. Remove, allow to cool slightly. Remove the tin frame, slide onto a cooling rack and leave to cool. Top with Smarties and hundreds & thousands.
