Preparation
In a shallow dish, whisk the eggs, milk, vanilla sugar and salt. Place the slices of bread in the dish, leave to soak for approx. 10 mins. Turn the bread and leave to soak for a further 10 mins.
To fry the bread
Heat the clarified butter in a non-stick frying pan. Reduce the heat, fry the bread in batches for approx. 2 mins. on each side until golden brown. Mix the sugar and cinnamon in a dish, dip the warm toast in the sugary mixture and serve immediately.
