Bring the water to the boil, remove the pan from the heat. Place the tea bag and dried fruit in the water, stir. Allow the tea to infuse for approx. 10 mins. Remove the tea bag, leave the tea and dried fruit to cool, chill for approx. 2 hrs.
Strain the tea. Crush the bottom end of the lemongrass. Halve the passion fruit, scoop out the flesh with a spoon, add to the tea with the lemongrass. Add the ice cubes and serve.
