Divide the apricots and thyme between the ice cube moulds, fill with water, freeze for approx. 2 hrs.
Bring the water to the boil, remove the pan from the heat. Add the green tea bag, leave to steep for approx. 5 mins., remove. Stir in the honey, add the peppermint, thyme, turmeric and lemon juice, leave to cool. Pour through a sieve into glasses, add the ice cubes, garnish with the reserved mint and thyme.
