Peel and roughly grate the carrot. Roughly chop the apple slices and nuts.
Mix the flour, oats and salt in a bowl. Crumble the yeast, mix in. Add the water and honey with the carrots, apples and nuts, mix. Knead into a soft dough using the dough hook on a food processor for approx. 5 mins. Cover and leave to rise at room temperature for approx. 1 hr. until doubled in size.
To shape the rolls
Divide the dough into 12 portions, shape into round rolls, place on a tray lined with baking paper, cover and leave to rise for approx. 1 hr. Brush the rolls with a little water, sprinkle with the rolled oats.
Slide the rolls into the lower half of an oven preheated to 240°C, reduce the temperature to 220°C. Bake for approx. 25 mins. Remove from the oven, leave the rolls to cool on a rack.
