Wash the potatoes thoroughly and wrap individually in foil. Place on a baking tray with the seal facing upwards.
Approx. 50 mins. in the centre of an oven preheated to 200°C. Remove from the oven, cut into the potatoes with a knife, gently press together so that the potatoes open up, remove the foil.
Stuff the potatoes with the crème fraîche, trout and avocado, drizzle with lemon juice, season.
