  • 300 g yellowfin tuna steaks
  • 1 tbsp sesame oil
  • 2 tbsp black sesame seeds
  • 0.25 tsp salt
  • 2 tbsp toasted sesame seeds
  • oil, for frying
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 0.5 tbsp sesame oil
  • 0.5 tbsp liquid honey
Wasabi mayonnaise
  • 50 g mayonnaise
  • 1 tsp wasabi paste
To serve
  • 100 g edamame
  • 15 g Micro Greens

Brush the tuna cheek with oil, season with salt. Empty the sesame seeds into a deep bowl, mix, toss the fish in the seeds. Heat the oil in a non-stick frying pan, fry the fish for approx. 30 secs. on each side, leave to cool. Fine Food tuna cheek
Combine the rice vinegar, soy sauce, sesame oil and honey.
Wasabi mayonnaise
Combine the mayonnaise and wasabi.
To serve
Cut the tuna cheek into thin slices, arrange on a platter, drizzle with the dressing. Garnish with edamame and micro greens, serve with the mayonnaise.
