Chilli oil
  • 0.5 dl olive oil
  • 2 tbsp water
  • 1 red chilli pepper, deseeded, cut into pieces
  • 1 garlic clove, cut in half
  • 0.5 watermelons, cut into cubes
  • 8 wooden skewers
  • 250 g halloumi, cut into cubes
  • 2 tbsp soy sauce
  • 0.5 organic lime, use grated zest

Chilli oil
Puree the oil, water, chilli pepper and garlic.
Thread the melon and halloumi alternately onto the skewers, brush with the chilli oil. Set aside the remainder of the oil.
Charcoal/gas/electric grill
Cover and grill the skewers over/on a medium heat (approx. 200°C) for approx. 8 mins. all over.
Combine the soy sauce and lime zest with the reserved oil, serve with the skewers. Cut the remainder of the lime into wedges and serve with the dish.
