Grilled peach and tomato salad

This is needed
for 4 people
Couscous
- 1 tsp ground coriander seeds
- 0.5 tsp salt
- 1 organic lime, use a little grated zest, juice set aside
- 150 g couscous
- 3.5 dl water, boiling
Coriander dressing
- 2 bunches coriander, torn into pieces
- 0.5 dl olive oil
- 0.5 tbsp liquid honey
- 2 tbsp water
- 1 garlic clove
- 0.25 tsp salt
- a little pepper
Charcoal/gas/electric grill
- 0.5 charentais melon, cut into wedges
- 2 tbsp olive oil
- 0.25 tsp salt
- 0.25 tsp chilli flakes
- 2 peaches, cut into wedges

- 200 g burrata piccola, torn into pieces
- 3 tomato, cut into wedges

And that's how it's done
Couscous
Mix the couscous, lime zest, coriander and salt in a bowl, pour the boiling water over the top, cover and leave to absorb for approx. 5 mins. Separate the couscous with a fork.
Coriander dressing
Puree the coriander, garlic, oil, water and honey with the reserved lime juice until smooth, season.
Charcoal/gas/electric grill
Brush the peach and melon with oil, season. With the lid down, grill the peach and melon over/on a medium heat (approx. 200°C) for approx. 3 mins. on each side.
Salad
Serve the couscous on a platter. Top with the peach, melon and tomatoes. Arrange the burrata on top. Drizzle with the coriander dressing.
