  • 1 tsp ground coriander seeds
  • 0.5 tsp salt
  • 1 organic lime, use a little grated zest, juice set aside
  • 150 g couscous
  • 3.5 dl water, boiling
Coriander dressing
  • 2 bunches coriander, torn into pieces
  • 0.5 dl olive oil
  • 0.5 tbsp liquid honey
  • 2 tbsp water
  • 1 garlic clove
  • 0.25 tsp salt
  • a little pepper
Charcoal/gas/electric grill
  • 0.5 charentais melon, cut into wedges
  • 2 tbsp olive oil
  • 0.25 tsp salt
  • 0.25 tsp chilli flakes
  • 2 peaches, cut into wedges
  • 200 g burrata piccola, torn into pieces
  • 3 tomato, cut into wedges

Mix the couscous, lime zest, coriander and salt in a bowl, pour the boiling water over the top, cover and leave to absorb for approx. 5 mins. Separate the couscous with a fork.
Coriander dressing
Puree the coriander, garlic, oil, water and honey with the reserved lime juice until smooth, season.
Charcoal/gas/electric grill
Brush the peach and melon with oil, season. With the lid down, grill the peach and melon over/on a medium heat (approx. 200°C) for approx. 3 mins. on each side.
Serve the couscous on a platter. Top with the peach, melon and tomatoes. Arrange the burrata on top. Drizzle with the coriander dressing.
