Boil the sugar and water in a wide-bottomed pan without stirring. Reduce the heat and simmer, shaking the pan occasionally until a light brown caramel has formed. Add the lemon wedges, remove the pan from the heat, continue stirring until the caramel has dissolved.
Add the honey, sultanas, apple, thyme and cinnamon, mix. Place everything in an ovenproof dish.
Bake for approx. 12 mins. in the centre of an oven preheated to 200 °C. Remove from the oven and allow to cool a little.
