Salsify
  • salted water, boiling
  • 500 g salsify, peeled, cut into sticks approx. 8 cm long
  • 140 g bacon strips
Salad
  • 1 tsp mustard
  • 2 tbsp apple vinegar
  • 1 tbsp olive oil
  • a little pepper
  • 3 tbsp plain yoghurt
  • 0.5 tsp salt
  • 130 g lambs' lettuce
  • 1 red-skinned apple, diced
  • 1 tbsp pumpkin seeds, toasted, coarsely chopped

Salsify
Simmer the salsify in boiling salted water for approx. 15 mins., drain. Wrap the salsify in bacon, fry for approx. 5 mins. all over in a non-stick frying pan.
Salad
Combine the mustard, vinegar, oil and yoghurt, season. Add the salad, mix, serve with the salsify. Scatter the apple and pumpkin seeds on top.
