- 500 g tomato, cut into cubes
- 1 red onion, finely chopped
- 1 red chilli pepper, deseeded, finely chopped
- 1 garlic clove, squeezed
- 0.5 bunch coriander, finely chopped
- 2 tbsp olive oil
- 1 organic lime, use grated zest and 1 tbsp of juice
- 0.75 tsp salt
