Heat the oil in a frying pan. Fry the meat and carrots in batches, remove. Wipe the cooking fat from the pan. Add the tomatoes, sausages and meat, mix. Pour in the stock and bring to the boil. Reduce the heat, cover and simmer for approx. 15 mins., season.
To cook the pasta
Cook the pasta in salted water until al dente. Mix the pasta with the sauce, plate up and garnish with parsley.
