Fry the sausages in a frying pan in batches, without any oil, for approx. 3 mins. per batch until crispy. Wipe out the resulting fat with paper towels between each batch. Remove the sausages. Sauté the onion and carrots in the same pan for approx. 5 mins., remove. Toast the flour in the same pan for approx. 5 mins. until hazelnut brown, stirring constantly. Pour in the water and cider, stirring constantly, bring to the boil. Reduce the heat, season with aniseed and ground cloves. Return the vegetables to the pan, cover and simmer over a low heat for approx. 15 mins., add the sausage and apple pieces, simmer for approx. 10 mins. until cooked, season.
