Heat the oil in a non-stick frying pan. Fry the chicken in batches over a medium heat for approx. 2 mins. on each side, season and place in the prepared tin. Drizzle over the tomato sauce, scatter over the basil and mozzarella, season with salt.
Approx. 10 mins. in the centre of an oven preheated to 220°C. Sprinkle the reserved basil over the top.
