  • 1 red chilli, deseeded, finely chopped
  • 1 spring onion incl. green part, finely chopped
  • 0.25 bunch flat-leaf parsley, finely chopped
  • 0.25 tsp pepper (black)
  • 0.25 bunch coriander, finely chopped
  • 0.5 lime, use only the juice
  • 1 tbsp liquid honey
  • 0.5 tbsp cane sugar
  • 400 g chicken thighs
  • 400 g chicken drumsticks

Mix the ginger with all the other ingredients up to and including the lime juice.
Mix the chicken with the marinade in a bowl. Cover and marinate in the fridge for at least 2 hrs.
Charcoal/gas/electric grill
Remove the chicken from the marinade, season with salt. Grill the chicken over/on a medium heat (approx. 200 °C for approx. 30 mins., turn occasionally and drizzle with lime juice.
