Roughly chop the apricots, cut the leek into rings. Rinse the rice in a sieve under cold running water until it the water runs clear. Drain well. Bring the water to the boil along with the rice, salt and apricots. Turn off the heat and leave the rice in the covered pan – without removing the lid – for approx. 15 mins. to fluff up. Separate the rice with a fork.
Fry the mince in batches in the hot oil for approx. 5 mins., remove and season. Pour the water and oyster sauce into the pan and bring to the boil. Reduce the heat, stir in the leek and mince, cover and simmer for approx. 5 mins.
