Bring the water and salt to the boil, add the yellow millet, simmer over a low heat for approx. 10 mins. Remove the pan from the heat, cover the yellow millet and allow to absorb for approx. 10 mins. (without lifting the lid), allow to cool slightly. Stir in the oil.
Heat the oil in a frying pan, add the carrots, gently sauté for approx. 5 mins. Add the water, vinegar, sugar and salt, cover and simmer for approx. 5 mins., remove the lid and cook for a further 2 mins.
Serve the yellow millet, carrots, burrata and blood orange in a bowl, drizzle oil over the burrata, season.
