Dressing
- 1 dl olive oil
- 0.5 organic lemon grated zest and juice
- 0.5 tsp allspice (d'Espelette)
- salt and pepper to taste
Salad

- 1 cucumbers, halved lengthways, diagonally sliced
- 1 kg watermelons, cut into slices approx. 1 cm thick, in triangles
- 5 sprigs basil, leaves torn off
- 8 slices cured ham
- 5 sprigs peppermint, leaves removed, coarsely chopped
- 4 tbsp pumpkin seeds, lightly roasted

And that's how it's done
Dressing
Mix oil with lemon zest, juice and pimento, season, set aside.
Salad
Mix melon, cucumber and herbs in a bowl. Place ham on plates, garnish with salad. Drizzle with prepared dressing, sprinkle with pumpkin seeds.
