Mix the flour, sugar and salt in a bowl. Crumble the yeast, mix in. Beat the egg with a fork, mix with the buttermilk, add and knead for approx. 10 mins. Add the butter, mix to form a soft dough. Cover and leave to rise at room temperature for approx. 2 hrs.
Divide the chocolate bars into quarters, divide the dough into 7 pieces, set aside 1 piece. Place 2 pieces of chocolate in the middle of each piece of dough, shape into balls. Line the springform pan with baking paper, place the balls inside.
Make ears out of the remaining piece of dough, place on top of the balls. Cover and leave to rise for a further 30 mins.
Approx. 25 mins. in the centre of an oven preheated to 200°C.
Remove from the oven, allow to cool slightly, remove from the tin, slide onto a rack and leave to cool.
Draw a little nose and eyes on the bears using the writing icing.
